One for the toddlers really, but this super simple biccies ticks the sugar-free box, so healthy and yummy enough for adults too with a nice cuppa on the side…
I can’t actually find the original recipe online (I was googling sugar free biscuits for toddlers, I think) but was keen to find something easy Gus would enjoy with his set of cutters – dog, house, stars, etc. And up in in Skye, my mother-in-law has a wonderful collection so we were in biscuit-making heaven. And we used a lovely local honey, Mil’sa Gharradh (Garden Honey) from Camuscross. I’m pretty rough and ready with how I make this, mixing all the ingredients together in no particular order and add extra flour or some milk to the final dough to get it just right.
§
175g butter
4 tablespoons honey
2 beaten egg yolks
250g flour

1. Melt the butter & honey in a pan
2. Mix in with the flour and eggs in a bowl
3. Cut out shapes and add flour if too sticky (I find the mixture is almost too
crumbly to roll properly so I just flatten with my hands, hence the rough surfaces!)
4. Bake at 180 degrees Celcius for 15 minutes.
Love that these are so easy! My little one loves to bake biscuits so I’ll definitely be trying this one out 🙂
