Super Easy Vegetable Soup

It’s one of those dishes I make without even thinking. A healthy, warming vegetable soup for lunch with whatever’s kicking around in the fridge…

Start with a base of roughly chopped garlic and leek and fry gently in oil. Then throw in whatever other veg you have. Couple of carrots, potato, kale… On this occasion we had a few swedes. I also like to add in tomato which I think helps with the taste (a tip from my Italian nonna!). Fry it all gently for a few minutes.

Then add water appropriate to how much veg you have, salt, pepper and some stock (teaspoon of vegetable Bouillon for me) and bring to the boil and then simmer for about 20 minutes. I like to break up the veg with a potato masher and sprinkle some grated parmesan on top…
