I love homemade coleslaw made by my mother-in-law and my pal Ali, but have never made it myself! Last night, I took the bull by the horns; reading from the super healthy but tasty Hemsley Hemsley recipe book but substituting with what we had to hand I’d say I created my very own homemade coleslaw…
My version goes a little like this…
The coleslaw
1/2 green cabbage, finely chopped
2 carrots, grated
1 fresh beetroot, grated
2 spring onions, finely chopped
loads of crushed, toasted almonds
The dressing
grated zest and juice of whole orange
2tbs of olive oil
sea salt & black pepper
NOW JUST MIX IT ALL TOGETHER!
(and/or sprinkle almonds over the top at the end!)
So delicious, the prep time was about 15 mins and it took our Sunday night sausage n’ mash to the next level. Plus, I have a whole load in the fridge to have for lunch through the week! Result, definitely should try new recipes more often. Especially when stats show that lots of people eat the same 9 meals over and over again…
